Charcuterie (from the French chair cuite, cooked meat) is the branch of cooking devoted to prepared meat products such as Sausage, Salami, Proscuitto di Parma, Jamon Serrano and Confit. The practice goes back to ancient times and can involve the chemical preservation, or curing, of meats. All cured meat Hams, whether smoked, air-cured, salted, are charcuterie products.
